How To Store Feta Cheese (In Brine)

Feta cheese is a staple in our kitchen and we always have some in the fridge. If you love it as much as we do and want to learn how to store feta cheese properly to keep it fresh, this post is for you! 

Feta cheese cubes in brine, kosher salt, more cheese on a cutting board and fresh basil on the side.

We often use feta cheese to make yogurt dip haydari, which is one of our favorite meze dishes. And there is always some leftover feta cheese crumbles afterwards. So what do we do with it? Well, we either eat it at breakfast the next morning or store it in the fridge for later use.

We do love this soft cheese in the simplest way: Combined with tomatoes, cucumbers, olives, onion and with spices like oregano and sometimes red pepper flakes. It is also a great snack with a little bread to suppress hunger. And it won’t last very long in our home. 

No idea what feta cheese is? It is a Greek aged cheese that is traditionally made from sheep’s milk only or a combination of sheep and goat’s milk. It is healthy and packed  with nutrients. Outside Greece, there are white cheeses made with cow’s milk. Their tangy taste and crumbly texture is very similar to feta’s as they are made with the same aging process.

How Long Does Feta Cheese Last?

Greek feta cheese is matured in brine, a solution of water and salt, and preserved in large barrels. At supermarkets, it is often sold in sealed packages. And an unopened package of feta lasts for several months in the refrigerator, but always check the expiration date before consuming it.

Feta comes with very little brine in its package. Similar to other fermented foods like pickles, feta is likely to dry out and lose flavor when the package is opened and it is removed from brine and exposed to air. So you might wonder how to keep feta fresh and extend its shelf life.

The best way to keep it fresh in the fridge for 3-4 days is wrapping it with a dampened paper towel and then keep it in a container. It is definitely not a good idea to simply keep it in plastic wrap or in a plastic bag.  

And if you are not planning to use it in a few days and want to keep it longer, you need a simple solution: Make your own brine! This keeps the feta fresh for a few weeks.

Ingredients For Feta Cheese Brine

Just like when preserving green olives, we only need 2 ingredients to make the brine: Water and kosher salt. 

Water in a jar, kosher salt in a mini bowl, feta cheese cubes on a cutting board and fresh basil photographed on a light background.

Water should be at room temperature.  If you find it difficult to dissolve salt in it, heat half of the water, dissolve salt in it and then combine it with cold water. If it is still warm, bring it to room temperature and then use. Never store feta cheese in warm water.

We recommend kosher salt when making brine. It is not just a flavoring agent, but it also helps the cheese to keep firm. Table salt doesn’t have the same effect. And just plain water doesn’t work. 

How To Make Brine 

Making brine is really easy and it is the method cheese makers use to store feta. The brine keeps the feta cheese a salty punch.

Dissolve 2 teaspoons of kosher salt in 1 cup of water. Cut the leftover feta cheese in cubes and place them in this simple brine. Make sure all pieces of cheese are covered well with the brine. Double or triple the amount of water and salt if needed.

You don’t have to slice the cheese before adding it into the brine, you can store a whole or half block of feta cheese in this brine if you want. But we find it easier to take the cheese cubes out of the container as needed. 

After placing the feta cheese in the brine, seal the container and keep it in the refrigerator for up to 3-4 weeks. 

Storing In Olive Oil

If you are after a low-sodium option to store feta cheese, the best way is marinating it in olive oil. Cut the cheese block into cubes, put them in a storage container. Pour olive oil (extra virgin if possible) over them making sure they are all well covered with olive oil. Seal the container and keep it in the refrigerator for up to 3 weeks.

You can add more flavors in the oil if you want. Herbs like oregano or thyme and garlic could be nice additions. 

When you use up all the cheese in the marinade, you can use the remaining olive oil in salads.

Freezing Feta Cheese

Freezing is another option to store feta cheese, but we recommend it for crumbled feta as it is easier to thaw. Also, eating frozen feta as it is may not be as good as eating fresh cheese.

So you won’t want to eat it with crackers as an appetizer. Instead, use thawed crumbled cheese in recipes like pasta, spanakopita (Greek cheese pie), quiche or pizza.

You can freeze feta crumbles in resealable bags for up to 3 months.

If you open the package, use some of the whole feta block and want to keep the rest for more than a few days, it should be kept in a solution of kosher salt and water. This will help the cheese keep its tangy flavor and firm texture.

Jubilee Cupcakes – red, white & blue!

Patriotic Platinum Jubilee Cupcakes are delicious vanilla cupcakes with a raspberry buttercream icing topped with red, white and blue sweets and sprinkles. Using the all-in-one method these cupcakes are super easy and don’t require any decorating or piping skills so are great to make with kids! They’re perfect for a Platinum Jubilee street party, garden party or even a kid’s birthday party!

Her Majesty, the Queen is celebrating her Platinum Jubilee with an extended weekend of events from 2nd to 5th June 2022. There will be street parties and all sorts of events to celebrate.

So, with this in mind I thought I’d dust down my utterly delicious Diamond Jubilee Cupcakes recipe, by re-shooting and updating it ready to become a Platinum Jubilee Cupcakes recipe.

I didn’t update the process shots (well may one) so you’ll notice a difference in cupcake cases and buttercream colour which will be explained further down.

I can’t wait for our Platinum Jubilee Street Party and I shall be bringing these cupcakes as they’re so easy to make. My daughter did all the decorating and I whipped up the cake batter that comes together really quickly.

Where do you get Red, White & Blue Sweets and Sprinkles?

You’d think that sweet manufacturers would bring out some patriotic coloured sweets to celebrate the Platinum Jubilee but sadly they didn’t. So, I bought 2 packs of supermarket own brand jelly beans and picked out the red and white jelly beans. I also bought 8 packs of Smarties and picked out the blue and red Smarties. I bought my Jubilee sprinkles in M & S but I noticed there were patriotic sprinkles in all the supermarkets.

How else can you decorate these Jubilee Cupcakes?

You can make Jubilee Butterfly Cakes by cutting out small circle of cake from the top, cut the circle in half, fill the hole with raspberry buttercream, place the “wings” into the buttercream and decorate with sprinkles. (See pic below which also shows pale pink buttercream from using fresh raspberries).

Can you make these Jubilee Cupcakes ahead of time?

Yes, these cupcakes keep really well and you can make them a day or 2 in advance as long as you store them in a single layer in a cake tin or Tupperware.

How many cupcakes does this recipe make?

This recipe makes 12 cupcakes but you could easily double to make 24 or triple the recipe to make 36 for a large party.

How long will these Jubilee Cupcakes keep?

These cupcakes will keep for at least 3 days if stored properly.

Can you freeze Platinum Jubilee Cupcakes?

Yes, you should freeze the cupcakes before decorating and decorate with the raspberry buttercream once they’ve thawed. Freeze cupcakes in a resealable plastic back pushing out as much air as possible. You can wash and re-use the bag afterwards.

 

Can you use frozen raspberries rather than fresh for the buttercream?

Yes, I used frozen raspberries this time and I found the colour and flavour more intense than when I used fresh raspberries. So, if you prefer your buttercream to be pale pink, then use fresh raspberries (see colour in photo further on).

How to make easy Jubilee Cupcakes!

  • The cupcake ingredients are just mixed together in a stand mixer, food processor or you could use an electric whisk. 
  • Just blitz most of the ingredients together and then add the milk and blitz again.

  • Then add to cake cases and bake.

  • Cool the cupcakes on a wire rack.

  • For the raspberry buttercream, sieve the raspberries to make a puree and then mix with the butter and icing sugar.

  • Then swirl on the buttercream with the back of a teaspoon and decorate with sweets and sprinkles (or make Butterfly Cakes like the one at the back below).

These easy and delicious vanilla cupcakes are made with a fresh raspberry buttercream and topped with patriotic red, white and blue sweets and sprinkles! Perfect for a Platinum Jubilee Street Party.

  • 1 Digital scales

  • 12 patriotic paper cupcake cases

  • 1 12 hole bun tray or shallow muffin tray

  • 1 stand mixer, food processor or electric whisk

  • mixing bowl if using electric whisk

  • 1 medium sized glass bowl

  • 1 rubber spatula

  • 1 teaspoon

  • 1 wire rack

  • 1 Set measuring spoons

Ingredients

  • 125 grams / 4½oz unsalted butter softened
  • 125 grams / 4½oz castor sugar
  • 2 large eggs
  • 125 grams / 4½ oz self-raising flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk
  • 1 Pinch salt

For the Raspberry Buttercream:

  • 55 grams / 2 oz unsalted butter softened
  • 190 grams / 6,5 oz Icing sugar
  • 67 grams raspberries, fresh or frozen sieved (giving 40 ml puree)
  • Decoratons:
  • Jelly bean sweets pick out the red and white jelly beans
  • Smarties (sugar coated chocolate buttons) pick out the blue and red Smarties
  • red, white & blue cake sprinkles

Instructions

  • Preheat the oven to 180°C.

  • Line a 12 bun tray or shallow muffin tray with paper cupcake cases.

  • Put all the cake ingredients except the milk in a food processor or stand mixer, adding a pinch of salt, and blitz/mix on a high speed until thoroughly mixed. (Don’t over mix).

  • Then pour in 2 tablespoons milk and process again till you have a smooth, flowing cake batter.

  • Using a spoon and a rubber spatula, divide the batter equally between the paper cases.

  • Bake for 18 – 20 minutes until they spring back to the touch.

  • Cool cupcakes on a wire rack.

  • To make the raspberry buttercream put the butter, icing sugar and raspberry puree into a bowl and mix well with a fork until smooth.

  • Once the cakes are cooled spoon on a generous amount of buttercream and swirl with the back of a spoon to distribute evenly.

  • Now for the fun bit, let you imagination go wild and decorate the cakes any way you wish with the sweets and sprinkles.

Notes

If using frozen raspberries thaw first or defrost in microwave for a minute.
